This cast iron cookie shows you don't have just to use your pans for savoury recipes. The cookie comes out with thick, crispy edges and a soft centre. The addition of the brown butter adds a pleasant nutty taste. Of course, you can always add a scoop of ice cream too.
Ingredients:
125g butter
170g brown sugar
50g honey
300g plain flour
1 teaspoon Malden salt
4g baking powder
2 eggs
300g chocolate chips
Plus another 75g butter for browning
Method:
Preheat oven to 190.C
Cream the butter (125g) and sugar, slowly add the eggs to the mixer and continue to stir on low for another minute.
Add the flour, salt, baking powder to the mix until incorporated and then finish with the chocolate chips
In a cast-iron skillet melt the extra butter (75g) over medium heat until the butter browns, about 3-5 minutes and allow to cool slightly
Spoon the cookie batter into the iron pan and spread evenly around
Bake in the oven for about 20 minutes. Allow the cookie to cool a little then dig in
