Recipe - Sriracha devilled eggs

This is a super easy recipe that makes a great snack or canape for any dinner party



Ingredients

10 Cacklebean eggs

4 tbsp mayonnaise

4 tbsp Sriracha sauce

1 tsp paprika

½ bunch coriander


Method

Boil the eggs for 8 minutes in boiling salted water and allow to cool in running cold water then peel the eggs by removing all the shell.


Cut the eggs in half lengthways and remove the yolk with a teaspoon, place the yolks into a mixing bowl and the egg whites onto a tray.


Add the mayonnaise and Sriracha to the egg yolks and whisk together in a mixer or blender and taste for seasoning adding more Sriracha for heat if needed.


Chop half of the coriander and mix through saving some for garnish later.


Place the yolk mixture into a piping bag with a nozzle if you want a star effect, then pipe into the egg whites.


Finish with a sprinkle of paprika and coriander.
