This is a lot easier to make than you may think, especially if you cheat a little and buy the sponge fingers and a lot more enjoyable if you add a lot of alcohol

Ingredients
7 egg yolks
160g Sugar
500g mascarpone
300ml double cream
400ml espresso
200ml of Kahlua, Tia Maria or Baileys (optional)
30 ladyfingers (depending on the size of dish)
Cocoa powder
Method
Whisk the cream to a soft peak then add the mascarpone and combine till smooth
Whisk the eggs and sugar in a bowl over a pan of hot water and cookout till thick and triple in size (zabaglione)
Gently fold the two mixes together and set asidePour the coffee and alcohol (optional) into a shallow dish then dip the sponge fingers one at a time for a few seconds until they are nicely soaked (not too long or they get soggy)
Layer the soaked fingers in a dish with the cream mix till everything is used finishing with a creamy layer
Cover and chill for a few hours or overnight then dust with the cocoa powder
